If a book holds your money in bitcoins, then you are subject to bitcoin price changes. If the price of bitcoins goes up, then you have more dollar value and vice versa.

If you deposit with Anonibet or Jetwin, you can request to have a US Dollar account so you aren't subjected to bitcoin fluctuations. Jetwin allows others currencies besides US Dollars. All deposit and withdrawals are still made in bitcoins.

To buy bitcoins you can go through Coinbase, Circle or Localbitcoins. It best to stay away from Coinbase since they shut down accounts. There are many exchanges and wallets.

The best way to sell bitcoins is through Localbitcoins since you may be able to receive more than market price.

You can also check some casinos which accept Bitcoin here. It is a free list of them, very useful really.
